Ingredients:
Celery(Salad leaves) - 4 sticks
Small Carrots(chopped) - 2 nos
Small Onions(chopped) – 2 nos
Turnip(chopped) - 80 gm
Small Tomatoes(chopped) - 4 nos
Bay leaves – 2 nos
Nutmeg powder - 1/2 tsp
Salt - 1 tsp
Black Pepper powder - 1/2 tsp
Butter - 6 tsp
All purpose flour(Maida) - 3 tsp
Milk - 1 cup
*Stock - 3 cups
Onion Rings - 4 nos
*For making veg stock:-
Mix everything in a pressure cooker, cover it with lid and boil for 15 minutes. If you want to make a clear soup, don`t mash it. Turn off the gas. Strain using a strainer. Use the liquid for making soup.
Method:
1)Heat butter in a vessel.
2)Add all the chopped vegetables except tomatoes and sauté for about 5-7 minutes.
3)Add the veg stock, tomatoes, bay leaves, nutmeg powder, salt and pepper powder and bring to a boil.
4)Cover and simmer gently for 30-35 minutes. For a clear soup, sieve it. Otherwise liquidize in a blender.
5)Mix well the flour in milk and add to the soup.
6)Cook until it becomes smooth and thick.
7)Garnish with onion rings.
