Red Pepper, Tomato Soup

Ingredients

1 Red pepper,deseeded and chopped
2 Tomatoes
1 onion/red onion
1 tsp salt
1/2 tsp pepper

Method

Preheat the oven to 200 degree celsius and then select the grill option.
Oil the pepper, tomato and onion and roast for about 30 minutes till the peppers are soft.
Remove the vegetables from the oven and allow to cool slightly, then blend in a processor untill smooth.
Strain the vegetable mixture and then add water or vegetable stock (2 cups).
Season to taste with salt and pepper and bring to boil once and then simmer for about 5 mins.
Seve hot with garlic bread.
