Ingredients
Idiappam
250gms/1 cup Idiappam flour
2-2&1/2 cup water
1 tsp salt
1 tbsp oil
Stew
2oz each of carrot, beans, potato and onion chopped in long (1 inch)slices
1 oz/6-7 garlic cloves
2 tsp mung dal
200 ml homemade coconut milk
1 oz ginger
1 tsp salt
3 tsp coconut oil
1/2 tsp cumin seeds
8-10 curry leaves
Method
For idiappam
1.Boil the water and pour in the well of idiappam flour along with salt and oil.
2.Knead the dough while hot and cover it till ready for use.
3.For making the idiappam, you will need the mold (sev mold ).
4.Steam the idiappam and serve hot with veg stew.
For Stew
1.Pressure cook the mung dal along with garlic cloves. After cooled, mash it and keep aside.
2.Grind the ginger by adding 2 tsp water and strain.
3.Boil the vegtables with little salt. (Microwave it to retain colour if desired)
4.Add the cooked mung dal and the ginger to it.
5.Now add 2 cups of water to it and bring to boil.
6.Next add the coconut milk and boil it only once stirring continuously to avoid curdling. Lower the flame.
7.Add 1 tsp salt and then season it with coconut oil, cumin seeds and curry leaves.
8.Serve hot with idiappam.
P.S - Traditionally the grated coconut is ground and then the first milk is removed upto the 3rd milk. But for today's times, using ready-made has brought out equally good delicious taste.
