Bagara Baingan

The typical hyderabadi style dish which has been a favourite amongst our friends!

Ingredients

12 mini brinjals
1 tbsp tamarind
2 tbsp til (sesame seeds)
1/3 cup ground nuts (roasted and peeled)
2 tbsp grated dry coconut
2 tbsp ginger-garili-green chilli paste
1 cup chopped onions
2 tsp haldi
3 tsp cumin-coriander powder
1/2 tsp red chilli powder
1 and 1/2 tsp salt (or acc to taste)
2 tbsp oil
Oil for deep frying

Method

1. Slit the brinjals in 4-6 sides and sprinkle some salt on it and keep aside for few minutes.
2.In the meanwhile soak the tamarind juice in water (atleast 1/2 hour)
3.Make a paste of til, ground nts and dry coconut.
4.Heat oil in a pan for deep frying the brinjals and keep the deep fried brinjals aside.
5.Now in a pan, heat oil and add the chopped onions and ginger garlic paste. Fry till light brown.
6.Then add the ground paste and fry for one minute.
7. Now add all the spice powders.
8. Strain the tamarind juice and add in the pan. Also add 1 cup of water.
9. Now pit the salt and mix well and close the lid and simmer for 5 mintes.
10.Now add the fried brinjals and again cover the pan and cook for another 5 minutes on slow flame.
11. Serve hot with rice or roti.
